Which Language?
There are two different written forms of Chinese commonly used on the internet, these are called Simplified and Traditional. There are also various language dialects used for spoken chinese - you would only be concerned about these if you were using spoken text audio (eg a dubbed video). Which should you use?

For Mainland China
You need to use Simplified characters written Chinese, and Mandarin language audio.

For Taiwan
You need to use Traditional characters written Chinese, and Mandarin language audio.

For Hong Kong and Macau
You need to use Traditional characters written Chinese, and Cantonese language audio.
